Chocolate Sprinkles Mini Egg Muffins

happy easter week end everyone. i hope you enjoy the holiday and have a lovely time with your family and loved ones. lets face it, easter is all about the chocolate and even though i try to eat whole and healthy most days, there nothing wrong with a sweet treat during this day. i live in germany and theres tons of chocolate around easter but i never got my hands on any type of mini eggs but this year they started selling them and oh boy, there are amazing. so i decided to include them in my favorite cake recipe and make muffins out of it. the actual batter is made of such simple ingredients that i have at home most days so its easy and quick in comes in perfectly for last minute baking. so here we go:

you will need:
● 200 gr. of butter (room temperature)
● 160 gr. of caster sugar
● 1 pack or 4 tee spoons of vanilla sugar
● 1 pinch of salt
● 4 eggs
● 300 gr. of flour 
● 1 pack of backing powder
● 100 gr. of chocolate sprinkles
● 1 pack of chocolate cake ganache 
● mini eggs, as many as you want

preheat the oven to 180 degrees Celsius. start by mixing the sugar, eggs, vanilla sugar and butter until they are nice and foamy. then add the dry ingredients and mix until it makes a nice batter. add in the chocolate sprinkles. chocolate chips or chopped up chocolate will work too. fill your muffin tray with muffin cases. i went for pink ones with white polka dots because they look so cute and then add the batter and fill them up quite high because these will be muffins and not cupcakes. now let them bake for 25-30 minutes. make sure to check on them every now and then as every oven is different off course. when they are golden brown and cooked through take them out and leave them to cool.

now its time to decorate. i used a ready to go chocolate ganache but you could easily melt some chocolate to cover the top of the muffins and make the perfect sticky surface for the mini eggs. i used some whole mini eggs and brushes some too. just put them into a freezer bag and smash them with a rolling pin. put the chocolate covering on first and let it cool for a few second before adding the very yummy decor. that way it sticks on way better and thats basically it. very easy and very yummy muffins. perfect for a last minute treat and they look beautiful. let me know if you like baking posts and tweet me a picture if you make them. i'd love to see your creations.
